Ingredients:
- 300g extra-lean minced beef
- 1 onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 2 celery stalks, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 200g long-grain rice
- 400g can chopped tomatoes
- 300ml beef stock (made with a stock cube)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:

- Spray a large non-stick pan with low-calorie cooking spray and place over medium heat. Add the minced beef and cook until browned, breaking it up with a spoon as it cooks.
- Add the chopped onion, red bell pepper, green bell pepper, celery, and minced garlic to the pan. Cook for about 5 minutes until the vegetables start to soften.
- Stir in the Cajun seasoning, paprika, dried thyme, dried oregano, and cayenne pepper. Cook for another minute to release the flavors.
- Add the long-grain rice to the pan and stir well to coat it with the spices and vegetables.
- Pour in the chopped tomatoes and beef stock. Season with salt and black pepper to taste. Stir everything together, then bring to a boil.
- Reduce the heat to low, cover the pan, and simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.
- Once the rice is cooked, remove the pan from the heat and let it sit for a few minutes to steam.
