Ingredients:


4 eggs
6 egg whites
â…› teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
½ red onion, finely chopped
4 ounces smoked salmon, flaked
2 tablespoons capers, drained


Directions:


In a small bowl, whisk the eggs, egg whites, and pepper. Set aside.


In a large nonstick skillet over medium-high heat, heat the olive oil until it
shimmers.


Add the red onion and cook for about 3 minutes, stirring occasionally, until
soft.


Add the salmon and capers and cook for 1 minute.


Add the egg mixture to the pan and cook for 3 to 5 minutes, stirring
frequently, or until the eggs are set.
