Ingredients:

  • 300g extra-lean minced beef
  • 1 onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 200g long-grain rice
  • 400g can chopped tomatoes
  • 300ml beef stock (made with a stock cube)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

    1. Spray a large non-stick pan with low-calorie cooking spray and place over medium heat. Add the minced beef and cook until browned, breaking it up with a spoon as it cooks.
    2. Add the chopped onion, red bell pepper, green bell pepper, celery, and minced garlic to the pan. Cook for about 5 minutes until the vegetables start to soften.
    3. Stir in the Cajun seasoning, paprika, dried thyme, dried oregano, and cayenne pepper. Cook for another minute to release the flavors.
    4. Add the long-grain rice to the pan and stir well to coat it with the spices and vegetables.
    5. Pour in the chopped tomatoes and beef stock. Season with salt and black pepper to taste. Stir everything together, then bring to a boil.
    6. Reduce the heat to low, cover the pan, and simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.
    7. Once the rice is cooked, remove the pan from the heat and let it sit for a few minutes to steam.
    8. Fluff the rice with a fork and serve hot, garnished with chopped fresh parsley.
